Welcome to Joffer Family Ranch in beautiful Southern Oregon where we produce super premium, super lean, grass fed ground beef and jerky. We call it Skinny Beef...a beef with less fat, less calories, less cholesterol, and more protein per serving than pretty much any other meat that you can buy.
How do we do it? We specially select naturally lean breeds of sport cattle, we exercise them, feed them grass or grass hay, then have all of the premium, lean steak cuts, such as Top Sirloin and Filet Mignon included in the ground beef as well. The result is Skinny Beef, a delicious ground beef that is good for you too!

The secret to producing Skinny Beef is our specially selected breeds of lean cattle that don't get real fat like steers that are bred to produce lots of beef. They don't get fed grain, are not implanted with growth hormones, or go to a feedlot like normal, big, fat, beef steers like the one being shown below by my son at our county fair.
Skinny Beef is all natural, grass fed and grass finished, low in cholesterol, super low in fat, and while the beef may not make the grade for prime beef, it is much better for you! We put all of the premium steak cuts into our premium ground beef, and the final result is an incredibly lean, lower cholesterol, great tasting, ground beef.
Skinny Cows vs. Fat Cows...
Normal Beef steers like this one that my son showed in his 4-H days are fed in feedlots to get "finished" or in other words...FAT. No matter if they are raised "natural", or "organic", or even have their fat trimmed to some degree...they have been bred to produce beef with lots of "marbling" - another word for fat. Now fat can be good, in fact the more fat, the higher the classification such as prime, choice, etc. I'll admit that I love a really good "fat" steak, I love ranching, and the beef industry, etc. BUT, many of us can't eat like that every day...the calories, the cholesterol, the saturated fat is just too much! After all, heart disease continues to be the leading cause of death in the United States by a wide margin and obesity has become an epidemic in this country. So what do we do? Well if you don't know about Skinny Beef ground beef, you spend way too much money on organic free range chickens, farm raised fish, turkey burgers, veggie burgers, tuna, egg whites, buffalo, emu, or whatever other lean protein source you can find!
