Lab results from our first lot showed .19 grams of fat per 100 grams of product. Which effectively meant that our beef was by the FDA's definition "Fat Free". These tests cost us over $1,000 to have done...but you know what? It was worth it...as you don't have to take my word for it - the lab results speak for themselves, and ultimately we ended up with our label stating 98% Lean - 2% Fat which covers any variation from one package to the next.
Our second lot code showed results of 1.02 grams of fat per 100 grams of product...so we were still essentially 99% lean according to our second lot! No matter if it is 98%, 99% or 100% lean, it is all leaner than what you can find at pretty much any supermarket. If you want lean beef...here it is...order here.
And, here was a third lab test we did...the fattest results we've had at 1.76% Fat, closer to the 98% label reading, and subsequent tests now done at the processing plant have been 1.6% and 1.41% fat under our new 98% Lean label:
